Plus, they’re easy to control. You can set the temperature precisely, and most modern electric ovens have great timer functions, so you can just set it and forget it while you go about your day.

Now, let’s talk about the star of the show – the pork loin. When you’re at the grocery store or the butcher, look for a nice, fresh pork loin. You want one that’s got a good amount of marbling. The fat in the marbling is what’s going to make your pork loin juicy and flavorful. Usually, a 2 – 3 pound pork loin is a great size for a family meal.

Before we start cooking, we need to prep the pork loin. Take it out of the fridge about an hour before you plan to cook it. This allows the meat to come to room temperature, and it will cook more evenly. While the pork is coming to room temp, let’s make a simple but delicious rub.

In a small bowl, mix up some salt, pepper, garlic powder, paprika, and a little bit of brown sugar. The brown sugar will give the pork a nice caramelized crust when it cooks. You can also add a pinch of dried thyme or rosemary if you want an extra herb – y flavor. Rub this mixture all over the pork loin, making sure to get it into every nook and cranny.

Now, it’s time to get the electric oven ready. Preheat it to 375°F (190°C). This is a good starting temperature because it will sear the outside of the pork loin quickly, locking in the juices, and then slowly cook the inside.

While the oven is preheating, take a roasting pan and line it with aluminum foil. This will make cleanup a breeze. Place a wire rack in the pan, and then put the seasoned pork loin on the rack. The rack allows the hot air to circulate around the pork, so it cooks more evenly.

Once the oven is preheated, carefully put the pan with the pork loin in the oven. Set the timer for about 20 – 25 minutes per pound. But don’t just rely on the timer! You need to check the internal temperature of the pork. After about 30 minutes, start checking with a meat thermometer. You want the internal temperature of the thickest part of the pork loin to reach 145°F (63°C). This gives you a nice, juicy, and slightly pink center.

While the pork is cooking, you can make a simple sauce to go with it. In a small saucepan, melt some butter over medium – low heat. Add a couple of cloves of minced garlic and let it cook for about a minute until it’s fragrant. Then, pour in a cup of chicken broth and a splash of vinegar (I like to use apple cider vinegar). Let this simmer for about 10 – 15 minutes until it thickens up a bit. You can season it with a little more salt and pepper to taste.

When the pork loin reaches the right internal temperature, take it out of the oven and let it rest for about 10 – 15 minutes. This is a crucial step. During the resting time, the juices redistribute throughout the meat, making it even more tender and juicy.

Now, it’s time to slice up the pork loin. Use a sharp knife and slice it against the grain. This will make the meat easier to chew. Serve the sliced pork loin with the sauce you made and some roasted vegetables or mashed potatoes. Yum!
